Ginger Miso Brussels Sprouts Slaw

Happy Friday everyone!

As promised to some of you, here is the recipe for my Ginger Miso Brussels sprouts slaw.

 

Ginger Miso Brussels Sprout Slaw

4 cups brussels sprouts, shredded

3 carrots, chopped

1 cup edamame

1 can chickpeas, drained and rinsed

  Ginger miso dressing:

2 tbsp tahini

1 tbsp white miso

1/8 cup ginger, grated

2 tsp rice wine vinegar

sea salt to taste

~  Shred the brussels sprouts using the shredding attachment on your food processor, then add into a bowl with the chickpeas, carrots and edamame

~  In a small bowl, add all the ingredients for the dressing.  Thin with a little water and mix well until you reach your desired consistency

~  Pour the dressing over the salad and mix until everything is well coated

~ Serve chilled or at room temperature

This would be a great, healthy alternative to coleslaw at your next barbecue!
