Simple gourmet

Making a restaurant worthy dish at home doesn’t have to be complicated and time consuming.  This is a dish that I prepared the other night, with prep and cooking time it took me under an hour.  Not bad for a tasty, healthy and affordable meal.  The great part about this is that it tastes so good that no one will be able to believe that it so simple to make.  This dish is sure to impress your friends.


Stuffed portobello mushroom over balsamic spinach

2 portobello mushroom caps

2 cups sundried tomato hummus (recipe below)

4 cups baby spinach

1 tbsp balsamic vinegar

Preheat oven to 400 degrees

Place a generous helping of the hummus into the mushroom cap and place in the oven. Bake for 25 min

Toss the spinach in the vinegar and add it to the baking dish when there is 5 minutes of cooking time left



Sundried tomato hummus 

1 can garbanzo beans

2 tbsp tahini

4 cloves garlic

3/4 cup sundried tomatoes 

Process all ingredients in the food processor until well combined, add a little bit of water if you want a smoother consistency
