3.14 – Happy Pi(e) Day

Pi Day was yesterday and of course I had to develop a recipe and put my own healthy, vegan spin on it.  This pie is delicious, healthy and simple to make.  My peanut butter pie is a delicious indulgence that you can feel good about eating.  The tofu, peanut butter and almonds make this dessert high in protein, over 9 grams per serving!

With only a few ingredients and a little bit of time, you’ll be on your way to making a healthy dessert that everyone will love.  Here is the recipe for my spiced peanut butter pie….


Spiced Peanut Butter Pie

[For crust]
1 c dates
1/2 c raw almonds
1 tbsp cinnamon
1 tbsp garam masala

[For filling]
1 (12.3 oz) pkg organic silken tofu
1/2 c natural peanut butter
1/4 c coconut sugar
2 tsp vanilla extract
2 tbsp grated ginger

[For topping]
vegan chocolate chips

1.  Add all the ingredients for the crust into the food processor, pulse until well combined

2.  Press the dough into a pan lined with parchment paper

3.  Put all the ingredients for the filling into the food processor, pulse until mixed and creamy

4.  Pour filling into the pan and smooth over evenly

5.  Sprinkle the toppings over the pie and place in the freezer for 2 hours to set

* This recipe can also be made in a muffin tin or cut with cookie cutters to make small individual pies, perfect for dinner parties!
