Nothing beats the smell of freshly baked cookies!

The holidays are a great time to get in a creative mode and make homemade gifts for your loved ones.  Making gifts at home can be very easy and is fun to do.  Why not use it as an excuse to get a group of friends and family together and celebrate the holidays?

When I am crafting and working on projects at home I like to put on some good music and relax.  Also, to get in the holiday spirit nothing helps more then the smell of freshly baked cookies.  Here is a recipe that I made a few weeks ago.  These oatmeal cookies smelled delicious and tasted even better!

These cookies are gluten free, vegan and delicious without being too sweet.  To make the icing, I used Parmela’s original nut cheese.  Parmela has a wonderful line of vegan, cultured nut cheeses.  The creamy treenut cheeses are their newest and have a texture similar to cream cheese.

Since cream cheese is used as a base for many desserts, I thought that the original flavor of the cheese would be a perfect place to start.  I only needed to add a few things and then stir it up.  It made the perfect topping to my oatmeal cookies!

Here’s the recipe…

Oatmeal Cookies with a Cinnamon cream cheese frosting

[cookies]
1 c Brown rice flour

1/4 c unrefined cane sugar

1/2 c oats

3 tbsp ground flaxseed

1/2 bananna, mashed

1/3 c coconut oil

1 tsp vanilla extract

pumpkin pie spice

[frosting]
1/2 c Parmella tree nut cheese, original flavor

1 tsp vanilla extract

3 tbsp unrefined cane sugar

cinnamon

  • Preheat oven to 350
  • Mix together all ingredients for the cookies and mix well to combine, dough should be crumbly, but not dry. Add more coconut oil if needed.
  • Bake for 25 – 30 min
  • While the cookies are in the oven, combine the ingredients for the frosting and mix well, refrigerate.
  • When the cookies are done and cooled completely, frost and serve or refrigerate for later


 

Parmela also has other flavors such as black pepper and kalamata olive.  Their cheeses served on a dish with some veggies or crackers would make a great, easy appetizer at your holiday parties.
